A question and a discovery
my mom is currently out of town for a few weeks, meaning that I am the sole chef for the rest of our family. I can't go off of pb and j's and cheese crisps every night because my poor dad might grow weary of these "meals." now, before you judge me too harshly, you must understand, part of the territory that comes with me NEVER living on my own is that i have always had somebody that has cooked in the house. when i lived in tucson, i did some of the cooking split with my father-in-law, but i stuck to the basics of what i know (spaghetti, posse stew, etc.) and called my mom a lot for ideas. a blessing (and maybe curse now) of living with my parents is that my mom always cooks yummy meals since she has 30 plus years in the kitchen. me, on the other hand, am a baker. i don't cook much and am quite lacking in ideas. i can read directions, and follow everything my mom does or tells me. but as far as coming up with things depending on my ingredients, well that just doesn't happen. so, ideas please of some yummy easy meals you fall back on. kid friendly too! i'm thinking the crock pot might be my friends cause on the days i work, i don't get home until late and don't want to be in the kitchen for an hour. now, somewhat related...
Although, I'm quite aware that it's summer, I made some yummy pumpkin cookies today. While waiting for the cookies to bake, I was eating a graham cracker and decided to taste what some of the batter would be like on the cracker. I decided that the combination of the batter (pumpkin, yellow cake and chocolate chips) and a graham cracker was a step up from a smore and would be my new fallback on campouts if i had my way. I don't often make smores on campouts cause I hate the messiness and marshmellows are not my fav. I usually just eat the chocolate. But this combo is way yummy and I recommend trying it!!

If you like pinto beans and know how to make them in a crock pot I can tell you how to jazz them up into more like chili beans and they are super good. I especially like them after a long day or a chilly day. Let me know if you are interested.
You made pumpkin muffins and didn't call? In the new Nally cookbook there is a recipe for a chicken dish called heavenly chicken and it is pretty good and very easy to make.
Tatum - I've never been successful cooking pinto beans in the crockpot. What's your secret?
